Cocoa Masterclass: Connecting the dots across the cocoa value chain

ECOM sits at the centre of the cocoa value chain. Every day, our teams make decisions that shape quality outcomes, manage risk, influence pricing, and determine impact, often months or even years before a bag of cocoa reaches a chocolate maker's factory.   

 

Many of these decisions– at the farm, during fermentation and drying, through logistics constraints, certification systems, and local market realities– shape the market and the foundation for everything that follows.  

 

The Cocoa Masterclass was created to make those connections visible – bridging what happens at origin with the commercial, quality, and logistical decisions we make across ECOM every day, building a clearer understanding of cocoa as a complete, interconnected system.  

 

 

Over the years, our clients have asked fundamental questions about what happens before exporting: post-harvest practices, quality and flavour development, logistics realities, certifications, and how origin decisions ripple through the entire value chain. While many professionals understand chocolate making well, far fewer have had the opportunity to step back and explore the full cocoa value chain. At Cacao Latitudes, the Cocoa Masterclass is our answer.

Understanding the full cocoa value chain strengthens decision-making, improves communication across teams, and supports more informed relationships with producers and clients. The program is designed to turn complexity into clarity by connecting origin, quality, logistics, and markets in a practical, hands-on way that directly supports trading, sourcing, quality, and commercial teams.

Rather than teaching a single “right” way, the Cocoa Masterclass focuses on systems, relationships, and context. The cocoa and chocolate ecosystem is constantly evolving, and the program reflects this by encouraging curiosity, critical thinking, and open dialogue. 

 

Learning is shaped by multiple perspectives – from growers, processors, researchers, and sustainability practitioners to traders, quality experts, and participants themselves. The goal is a holistic understanding of how cocoa moves through the value chain, and how decisions at each stage influence both the product and the market. This philosophy guides every Cocoa Masterclass course and anchors thoughtful, informed discussion about an industry we care deeply about.

The Cocoa Masterclass goes beyond in-house expertise. Alongside ECOM professionals, we work with:

In 2025, participants visited Brazil, working with institutions such as CEPLAC and CIC, as well as the Mars research centre and smallholder farms.

In the Dominican Republic, the program regularly partners with organisations including CONACADO and IDIAF, linking cooperative models, research, and real-world production.

1. Classroom Masterclasses (3 days)

2. Origin Immersion: Dominican Republic (8 days)  

A full in-country experience following cocoa from farm to fermentation to finished chocolate, hosted with Zorzal Cacao, leaders in fine-flavour cacao and conservation.
